| Vinificatie | Harvest is done by hand in cases of 25 kg. Grapes are drained then picked out by hand on a table. Pinot Noir grapes are lightly crushed then 100% destemmed. Thanks gravity, berries go directly to the steel tank, which allows to keep 80% of the berries full and intact. A natural cold maceration for several days. The fermentation in closed tank last between 13 and 24 days depends the appellation and the vintage. A moderate punching of the grapes and a control of temperature thanks water trickle along the tank wall. The devatting is done thanks gravity, then we do a controlled pressing before the juice goes into barrels. Wines age on the lees in cold cellar, hence very late malolactic fermentations malolactiques. A month before the bottling, we do a racking thanks a belows. Bottling (around february - march) is done by ourselves with a very light filtration, even so none depends on the vintage. | |

Wijn: Bourgogne – Chantal Lescure – Pommard Les Chanlins 2001 – Frankrijk
dit was de oudste in de reeks, maar verdomd, gemaakt door een dame met ballen volgens mij, want in de mond gaf deze wijn nog helemaal niet al zijn wijngeheimen prijs – of is dat dan weer ‘des vrouwen’
?
Inderdaad, Kaat slaat spijkers met koppen. Potig beestje, deze Pommard, en heel complex met geuren van gebraden vlees (vatrijping, hoewel dat niet uit de beschrijving op te maken valt?), wierook en duidelijk een mineralige toets. Veel alcohol ook.

Deze was complex voor mij: fruit, terug wat medicinaal (nu opteer ik voor alcohol), lactisch,
sigarettenrook, vanille… dat beloofd. Nochtans viel deze wijn tegen in de mond: overheersende zuren en korte afdronk… Ik gok op Italië
Nochtans is deze Pommard niet door een vrouw gemaakt (ja,ja de naam is verwarrend), maar door mannen (en ja inderdaad met ballen aan hun lijf).
Voor mij was dit een zeer knappe Pommard die nog niet op zijn hoogtepunt is. Pommard is dan ook zo één van die pinot noir-regio’s die de krachtigste wijnen aflevert.
Heel complex in de neus, met nog veel primair fruit, kersen, bosaardbeitjes vermengd met die hint van een boswandeling in de herfst (wat champignons, een vleugje kreupelhout, geurende net afgevallen bladeren, tikje mossig).
In de mond kwam hij me een beetje stroef over. De tannines waren nog niet volledig versmolten, maar qua smaak opnieuw een weldaad aan aroma’s.
